Meal plan Dec 16 to 23, 2011

Condiments — sour cream, grated cheese, ...

Friday – tuna pasta (corn pasta, 2 cans flaked tuna, olive oil, lemon juice, oregano, garlic, capers)
Saturday – slowcooker Beef Curry
Sunday – roast chicken, green beens, rice
Monday – Beef stir fry with broccoli and orange ginger sauce Rainbow foods
Tuesday – salmon – lemon dill
Wednesday – Chicken Fajitas, salad
Thursday –  Lentil pasta, see below
Friday – ?

Curry sauce
3 onions
jalapeno peppers
2 tbsp curry powder
1 tbsp each garlic powder,cumin, coriander
1 tsp salt
1 tsp ground ginger
2 cans coconut milk
28 oz can diced tomatoes

Lentils with spinach and tomatoes over rice pasta

2 tbsp olive oil
1 onion, chopped
4 garlic cloves, minced
1 can lentils
1 cup chicken broth or beef broth? I might add cooked ground beef to this as well.
1 tsp Italian seasoning
1/2 tsp hot red pepper flakes
1/4 tsp dried oregano
1 can diced tomatoes
1 tbsp ketchup, or tomato paste?
1/2 tsp each salt and pepper
300g pkg frozen spinach
450g box of rice pasta
1/2 cup parmesan cheese

Fajita seasoning:
4 tbsp chili powder
8 tsp ground cumin
4 tsp course salt (I used sea salt)
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tsp cayenne – no way I’ll use this much!
